Serving for four people
One cup of Zaatar
Two cups of our tangy virgin olive oil from hills of Palestine,
Dough for pita bread or biscuit dough that contains four biscuits
A dash of flour.
Roll the dough in a circle or square and bend the edges inward to
prevent the spillage of the oil outside the dough. Put the flour on the
bottom of the dough so it does not stick to the table or the counter.
Also, put some flour on the bottom of the dough when you put on a pan
it in the oven.
Mix one cup of Zaatar with two cups of oil and stir till the oil covers
the Zaatar completely
Spread the Zaatar on the top of the dough and then put in the pre -
heated oven at 300 degrees for 7-10 minutes, depending on how crispy
you like your bread.
If the Israeli army is in the neighborhood and shut off your water,
blew up your water well and turned off the electricity, or prevent you
from leaving your homes for weeks at a time to buy fresh dough you can
do the following:
Karakeesh means crispy breadcrumbs in Arabic and what you do is toast
or put the bread in the pre- heated oven at 300 degrees for about three
minutes.
This will help preserve the bread and keep the Israeli army
under arms in Palestinian cities for as long as it takes to bankrupt
them and the government of the United States. Wait till the bread turns
crispy so it will last longer ala Jewish custom of Matzah leaven bread.
Put the Zaatar and oil mix on the crisp bread and then put it back in
the oven for two minutes and enjoy with a cup of mint tea free of
occupation, discrimination or humiliation at an Israeli checkpoint, or
if you are an Arab at an airport in the United States, the land of the
free.
